I believe you're taking about improvisation. There are many, many movies that have contain a scene or two of improvisation in them. Here's a couple of famous examples.

As for movies having no structure what so ever and just shooting the whole thing on improv, I might suggest watching a lot of 60's, early 70's movies. In specific acid trip movies, movies made by Alejandro Jodoroswky. A lot people, including myself, tend to not like these types of movies though, mostly because they feel all these movies are pretty much 2 hours worth of mindless babble. These movies also tend to get dated even when they are period pieces mostly because the film makers don't put any thought into what they are about to film until they film it. That and a lot of them are on drugs when they are filming.
Movies that follow this motif historically never do well in the long run. Case and point a modern day version of these type of movies that are mostly improv and have no structure are: Meet the Spartans, Date Movie, Epic Movie, etc.
