1) We have 2 bowls under the wire so if the eggs are in there how could I add more water if i have to? Do i pick the eggs up for a second?
2) If we put the eggs in an egg carton in the incubator how do we turn them while they are standing up in the carton? just turn them 1/2 around while in the carton?

It seems to me that you have a home made unit. You should keep enough water in the bowls to maintain 88 % humidity and 94 % the last three days. You can pick them up. Eggs should be on the side, not the point or larger end. Turn them about a quarter of a turn three times a day. Try a hole two or three square inches each top and bottom and close them down to maintain 99.5 degrees F at the eggs.
