I really do need a quick good answer for this. We have had 4 dwarf fruit trees, 3 apple and 1 pear..... my 2 year old son has come along and broken 2 of the apple trees, right on where they were spliced onto the rootstock. I guess I now have 2 questions.
1. Can I save the broken trees, if 'YES', how do I do that.
2. Did I plant the trees too high, in other words should I have covered the spliced part of the tree with compost?

1. I doubt that you will be successful in re-grafting the broken off tops (scions) at this time, as grafts are usually prepared in spring. Unfortunately, the scion is what determines the variety of apple your tree is supposed to produce...if your stumps do produce offshoots (and they might, this spring) they will not be the same as what you had planted...this is because the rootstocks are from a totally different variety of apple, chosen for its vigor or dwarf habit, and not (perhaps) for the quality of its fruits.
2. No you did not plant the trees too high. The place of grafting should be 3-6 inches above the soil's surface. Covering the trunk with compost would have eventually caused other problems for your tree.
If you have a streak of curiosity, you might want to let the stumps grow to see what happens...but with patience, as it will be a number of years before the tree will be mature (if in fact it survives in the first place). Otherwise, I would advise you to replace your two apples with dwarf varieties that have their own roots...such dwarves do exist, and they will produces offshoots of the rootstock that will always be the same as the scion...just in case your junior gardener does some more "pruning" for you in the future.
