hoe do you make home-made cacao?
I'm not talking about the drink, I mean making the powder and cocoa butter from the actuall seeds of the fruit.
I have access to cheap cocoa (live in the tropics) and would love to make my own chocolate from scratch.
I know that the seeds need to ferment and dry out before reducing them to a powder and extracting the butter.
Can anyone tell me what steps i can take to achieve this in my home?
